Introducing dekantā
dekantā are specialists in Japanese whisky, working with collectors globally and partnering with select distilleries in Japan to offer cask ownership opportunities. They lead the education and onboarding side of ownership, helping clients understand what’s available and what the journey involves. Untold Japan supports what comes next: designing bespoke travel in Japan around your ownership journey, from first visits to future milestones.
What is Cask Ownership?
Japanese whisky cask ownership is the purchase of an individual cask of maturing spirit directly from a distillery, with legal ownership of the liquid as it ages.
Each cask is produced, filled, and stored at the distillery, where it matures over a number of years under the supervision of the distillery team. As an owner, you can monitor its development, visit the distillery to taste your whisky over time, and ultimately decide when it is bottled.
Through dekantā, clients are introduced to a limited number of premium cask opportunities, with full guidance on the process, costs, timelines, benefits and outcomes. Allowing them to make an informed decision about whether ownership is right for them.

Karuizawa Whisky
KARUIZAWA
Karuizawa is one of Japan’s most collectible whisky names, known for a rich, sherry-cask style and a legacy shaped at the foothills of Mount Asama. Now revived in extremely small quantities, it’s a rare chance to follow a legendary profile into its next chapter.

Kiyokawa Distillery
IIYAMA
Kiyokawa’s Iiyama Mountain Farm Distillery is an independent whisky project in the mountains of Nagano, producing since 2019 and quietly building momentum before its first single malt release. Set in the Iiyama highlands, it’s defined by a rare ambition in Japan: a true “farm to bottle” approach. With homegrown barley as the goal, the team has pushed through years of trial and error to bring whisky-making closer to the land it comes from.

Ontake Distillery
KAGOSHIMA
Ontake is a modern distillery in Kagoshima built by Nishi Shuzo (est. 1845), combining deep spirits heritage with a high-end whisky vision. Set in the mountains with views toward Sakurajima, it pairs acclaimed early releases with an owner-focused estate that includes private golf, dining, and stays. For enthusiasts, it’s a rare mix of serious liquid and a setting designed around the ownership experience.
